Frenchman Thibault Casoli is regional sales manager for Greater China, Japan and Korea at the family-owned champagne house Billecart-Salmon. He spoke to Andrew Sun.

I am from Bordeaux, and I grew up eating a lot of game, including duck. Bordeaux is famous for this and lots of seafood. My parents had an Italian friend who would visit a lot, so I also ate a lot of home-made Italian food. These are my two biggest influences.
