The three-Michelin-starred Amber at The Landmark Mandarin Oriental is back after a nearly two-month refresh. Reopened on February 23, with a subtly reworked dining room, new uniforms and an enhanced wine cellar experience, the restaurant continues chef Richard Ekkebus’ pioneering, dairy-free, produce-led approach to French fine dining, with lunch and dinner menus that put vegetables, sustainable seafood and precise technique firmly in the spotlight.
