Four Seasons Hotel Singapore announces the upcoming launch of its Nordic Afternoon Tea offering at One-Ninety Bar, a refined new culinary experience crafted by Executive Pastry Chef Daniel Windelhed. Drawing inspiration from his Colombian roots and Swedish upbringing, Chef Windelhed brings a uniquely personal and contemporary interpretation to classic Nordic flavours, resulting in an afternoon tea that is both thoughtfully minimalist and ornately expressive.

Raised in Sweden and born in Colombia, Chef Windelhed’s culinary journey is shaped by a rich tapestry of cultural influences. Guided by the spirit of Fika and Hygge, the Nordic art of slowing down to savour life’s simple pleasures, this leisurely weekend treat brings Nordic warmth and flavours to the table with traditional Swedish delicacies and refined cocktail creations.

“Nordic pastry is about simplicity, balance, and respect for ingredients,” says Chef Windelhed. “This afternoon tea is a reflection of my own story, honouring the Scandinavian traditions I grew up with, while allowing room for the warmth and creativity influenced by my Colombian background.”

Guests can look forward to a selection of refreshing flavours, including Chef’s interpretation of the classic Swedish Princess Cake, layered with marzipan, raspberry jam, and diplomat cream, as well as a Summer Tart featuring strawberry and rhubarb compote paired with delicate vanilla cream, among other seasonal creations. Not to be missed as well are his house-made Warm Cinnamon Buns, served with an almond filling.
