Fei Zap Mai Laan from Shanghai opens in Singapore

You’re hearing it here first: Fei Zap Mai Laan (肥汁米蘭), a Shanghai-born brand known for its Hong Kong-style rice noodles, is set to open its first overseas outlet at VivoCity mall on 19 December 2025.

The popular chain, which debuted in 2017, has expanded rapidly and now operates over 60 stores across China. Much of its appeal comes from its focus on heritage recipes, some of which are over 60 years old.
Fei Zap Mai Laan traces its origins to the 1960s, when Mr Ye, who had moved from Yunnan to Hong Kong, developed its predecessor recipe by blending Yunnan rice noodle traditions with Cantonese techniques. The hybrid style was later brought to Shanghai by Mr Guan, the founder of the chain, who trained under Mr Ye after multiple trips to Hong Kong to study the recipe.

The brand is known for its piping-hot noodle bowls, cooked to order and served with a broth simmered Cantonese-style for over two hours. This cooking process produces a milky soup said to be rich in collagen, forming the base of most of its bowls. Ingredients, including the noodles themselves, are sourced from Hong Kong suppliers to maintain the brand’s original flavour profile.
One of the most distinctive dishes is the Hot & Sour Rice Noodles with Special Sauce (price TBD), comprising a tangy and umami broth made from fermented ingredients used in a recipe that dates back more than 60 years. According to the brand, this marks the first time the soup version of the dish is available in Singapore.
