[More Below] (I went to this place for dinner a day before my birthday and I really had a lovely pre-birthday meal 😇🥹) I never knew that we had a Singaporean chef that flew to Japan just to get trained to master the art authentic tonkatsu in the 90s. This is why Hajime, run by Chef Tan-San who was also the head/pioneer chef for Tonkichi and Tampopo (familiar names, horh?) I felt that his dedication in providing quality premium tonkatsu at affordable prices is really worth supporting for! Support local talent 😍 Here’s what I’ve tried Premium Pork Loin ($25.90++ for set, $21.90++ for ala carte) → As mentioned in video, love the breading, love the juiciness. Even excellent that it’s not greasy at all! Nagoya Miso Fillet ($22.50++ for set, $17.90++ for ala carte) → My favourite because of the strong miso sauce. The dominant red wine taste may not be suitable for everyone tho… → Note that there’s free flow rice & cabbage if you order a set (which you should get because they taste very refreshing when your entire plate is deep fried) → I also appreciate how much effort was put in to make the entire meal well rounded. You get savoury pickles, nourishing tonjiru, ice cold crunchy cabbage, and sweet juicy watermelons. → Special shoutout to the tonjiru. NOT normal miso soup ah, it’s a tonkotsu broth with hints of yuzu, simmered for over 12 hours Ebi Fry Ramen ($18.90++) → A unique recipe, also the first in Singapore to be created by chef himself → As mentioned in the video, very Chinese-inspired recipe. The noodles are QQ. The loin rib chashu is marinated like siao. Must try. Tori Karaage ($6.50++) → The secret dipping sauce is addictive 👁 Roasted Edamame ($5.50++) → Never really see people ROAST them before. But the smokey flavour makes it yums with drinks. I am no expert in Japanese cuisine, but this one is REALLY GOOD.
