FËI ZAP MÂI LÄAN is said to be China’s No. 1 authentic Hong Kong rice noodles and it has just opened its first overseas outpost (85th outlet) at VivoCity. The founder flew specially to Hong Kong to learn the ropes of this 60-year-old heritage recipe, which explains why the outlets in places like Shanghai’s Ningbo Road always have long queues.

The menu offers a 3-step process for customers to create their very own unique bowl of noodles. First, you’re required to choose at least 3 out of the 30 topping options. Next, choose your desired staples from options that include Rice Noodles, Udon, and Macaroni. Lastly, select your soup base at S$5.90 each.

There are 3 price points for the toppings — S$0.99, S$1.99, and S$2.99 each.

The Tomato Chop Bowl (S$16.90) is zesty and hearty, featuring a twist on the classic macaroni soup dish that’s a staple at Hong Kong cha chaan tengs.

It features a whole slab of specially marinated Hong Kong-style fried pork chop, sunny-side-up egg, diced tomatoes, and veggies. The tomato broth was well-balanced and comforting with a slight sweetness at the end of each spoonful.

The Mighty Four Bowl (S$13.90) is a complex combination of rice noodles, ham, wu xiang, fish roe balls, specially crafted char siew, tau geh, and coriander.

The soup is a slow-simmered bone base, flavoured with savoury minced meat and stir-fried zhajiang for a full-bodied, rich taste. I loved the thick cuts of char siew and the thin slices of ham that paired with the noodles. The copious amount of coriander might be a nightmare for some, but it actually imparted a lot of great flavour.

For those who love the numbing effect on your tongue whenever you have mala, the vibrant and tangy Pickled Punch Beef Bowl (S$15.90) is an ideal option. The bowl of rice noodles is served with tender sliced beef, beef tendon balls, black fungus, tau pok, bean sprouts, and coriander. Though each slurp of the soup was appetite inducing, I didn’t quite enjoy that weird, siap siap effect it had on my tongue. My 2 dining partners loved it, though — to each their own!

If only noodles were available on the menu, it would be a little dull, don’t you think? Thankfully, you can order snacks to pair with your noodles. Share some Braised Wings (S$4.90 for 3 pieces), Curry Fishballs (S$3.90), and Fried Wontons (S$5.90 for 5 pieces).

Save some belly space for dessert. Enjoy a refreshing bowl of Mango Pomelo Sago (S$5.80), with soft and sweet mango cubes and juicy pops of pomelo. I usually enjoy Black Sesame Paste (S$3.90) warm, but it was special that FËI ZAP MÂI LÄAN serves it cold instead. The Herbal Jelly with Coconut Milk (S$3.90) was one of my favourites with the creamy coconut balancing out the earthiness of the jelly. Those who love milky desserts will obsess over the Red Bean Double-Skin Milk Pudding (S$4.30).

Quench your thirst with the unique Salted Lemon 7-Up (S$4.90) and hot Milk Tea (S$2.90).
