When it comes to hospital food, most would probably imagine simple, bland meals with nothing to shout about.

But can you imagine seeing some of Singapore’s local favourites such as laksa, nasi padang and even chilli crab on a patient’s meal tray?

That’s exactly what some patients at Singapore General Hospital (SGH) and Changi General Hospital (CGH) are enjoying, thanks to healthcare cluster SingHealth’s collaborations with several famous local eateries.

According to the group, CGH’s Food Services team began reaching out to popular local eateries last year as part of efforts to expand its menu offerings and improve patients’ dining experiences.

Among those that came on board was Hjh Maimunah, which worked with the hospital over six months to develop dishes suitable for patients, it said on Aug 11.

During the R&D stage, the popular nasi padang chain’s chefs visited CGH’s kitchen to conduct cooking demonstrations and work alongside hospital chefs to preserve the dishes’ authentic flavours, said SingHealth.

And this was not an easy feat.

“The process becomes even more complex with dishes like Hjh Maimunah’s asam pedas, a rich tangy fish curry,” SingHealth explained, adding that multiple tasting sessions were conducted until a “perfect balance between nutritional appropriateness for patient care and authentic taste” was achieved.

“Every ingredient was scrutinised — MSG removed, full cream milk swapped for low-fat alternatives, and sodium reduced,” explained the healthcare group, adding that while finding healthier substitutes was a start, maintaining the dishes’ flavour while sticking to strict nutritional guidelines was the “real challenge”.

The menu was officially launched in January this year.
