It takes me straight back to those recess breaks where I’d drown it in chili sauce 🤤. Now I’ve leveled it up with mentai and chili oil, and boyyy let me tell you… it slaps hardddd. This recipe makes about 12 jumbo siew mai. 📝 ingredients: 300g peha ayam fillet dgn kulit/ boneless chicken leg with skin 150g peeled prawns 5 cloves of garlic (smashed) 75g tapioca flour 1 egg white 1/4 tsp mushroom seasoning/bouillon 1/4 tsp white pepper 3/4 tsp salt 1/2 tbsp oyster sauce 1/2 tbsp sesame oil 1/2 tbsp kicap asin/ soy sauce (salty version) 4 cubes of ice minced carrots dumpling wrappers mentai mayo seaweed flakes Process 🍳🔪 (1) Prepare steamer. In a food processor, add in chicken , garlic, tapioca flour, egg white along with the seasonings, cubes of ice and blend into a smooth consistency. (2) Add peeled prawns and carrots in and blend for a bit for more textured filling. (3) Grab a dumpling wrapper, add 1 1/2 tbsp filling and wrap it. (4) Steam for about 25 mins. (5) Add mentai mayo, torch the top and finish off with seaweed flakes!
