You don’t often see a whole lamb shank grilling over charcoal in a hawker centre! 🔥🐑 We first met Ding Yi Ran years ago at Shi De Ji in Tanjong Katong. A Chinese Muslim from China, she started her first Muslim food stall at just 19. Now, Shi De Ji has moved to Old Airport Road Food Centre! Her signature lamb dishes are prepared with 36 Chinese herbs and spices, without MSG, inspired by her family’s tradition of medicinal cuisine. The Braised Lamb Trotter was tender, gelatinous and deeply aromatic, but my favourite was the Charcoal-Grilled Lamb Shank — juicy and tender with smoky, charred edges.
