Ever tried your favourite Singaporean hawker favourites done in a heart-heathy version? Here’s my version of a heart-healthy Mee Siam recipe: Spice paste: 4 dried chillis, soaked in warm water for 10 minutes 6 shallots 4 cloves of garlic 3 stalks of lemongrass(white portion) 20g dried shrimp(soaked in water for 10 minutes) 1 tsp Belachan/fermented shrimp – blend all the ingredients, add a bit of water to help it blend if the ingredients are too dry – fry the spice paste in 1 tbsp of oil for 10 minutes on medium heat Soup: 2 tbsp tao cheo, blended into 1 tbsp of water 50g tamarind puree 1.2kg of stock or water 150g of pineapple, blended with 50g water – add the tao cheo, pineapple, and tamarind to the spice paste and continue to fry for 5 more minutes. Then add the water or stock and boil for 30 minutes.
