Craving a taste of singapore so we make it work with what we have #laksa #currylaksa 2 pieces chicken thighs 1 tsp garlic powder 1 tsp onion powder 1 tsp white pepper 1 tsp cornstarch 1 tsp neutral oil 2 Tbsp Thai red curry paste 1 can coconut milk 1 can chicken broth 1 tsp curry powder 1 Tbsp fish sauce Juice of half a lime Mee hoon noodles (or whatever you have), shrimp, fish balls, tofu puffs, bean sprouts & cilantro to serve Cut your chicken thighs into strips and mix in seasoning, cornstarch & oil and set aside. To a pot, add in 1 Tbsp neutral oil & curry paste and fry for a few minutes until fragrant. Add in chicken thighs and spread into a flat layer to develop some color. Once you see it cooking around the outside, sauté violently. Add in coconut milk & curry powder and bring up to a boil. Once boiling, add in shrimp, fish balls, tofu puffs and whatever else you might want to serve with. Meanwhile, cook your preferred noodles. Cut the heat on the laksa and add in lime juice & fish sauce. Serve along with bean sprouts, cilantro and extra lime & enjoy!
