Bak chor mee, or similarly fishball noodles 📍Hill Street Tai Hwa Pork Noodle, Crawford Lane 📍Ah Ter Teochew Fishball Noodles, Amoy Street Food Centre A good bak chor mee will feature springy noodles with a good bite, a mouthwatering sauce with a nice spicy kick, and pork meat among other ingredients which vary between stalls. These two stalls have a long history. The Tai Hwa family are more renowned due to their multiple award wins, and their generous serving that will absolutely fill you up. Ah Ter has been quietly doing his thing for decades and is one of Amoy St’s oldest vendors. Bak kut teh 📍Outram Park Ya Hua Bak Kut Teh 📍Song Fa Bak Kut Teh Song Fa is the more well-known, easily accessible, and consistently delicious outlet to get your BKT fix, but then you have family-run places like Outram Park Ya Hua too. Both do a clean, peppery and aromatic pork broth that feels ridiculously comforting to drink. Make sure you ask for a refill of the soup! Hae mee (prawn noodles) 📍Jalan Sultan Prawn Mee 70+ year old spot visited by many. Their prawn soup broth here is extremely refined, balanced yet rich in the prawn flavour. 📍Adam Rd Noo Cheng Big Prawn Noodle, Adam Food Centre One of the most popular stalls at their food centre with long lines at lunch. The first place I ever tried dry hae mee and it was a complete love at first bite! The prawn broth on the side is concentrated heaven.
