The hottest ingredient of 2026? It is not a new breed of truffle<\/span>, chocolate-fed Wagyu<\/span>, nor caviar<\/span> on pearl spoons. Instead, this ingredient is far from new, dating back about 9,000 years: corn.<\/div>\n

Across New York, London and Japan, sweetcorn pastries, pastas and pizzas have captured the imagination of chefs, content creators and corn enthusiasts.<\/p>\n

In Hong Kong, the trend is no different, with a corn-focused eatery opening in the city\u2019s Central neighbourhood and everything from corn shabu-shabu offerings to corn ice cream specials and cocktails featuring the ingredient.<\/p>\n

From Mesoamerica to the Ming dynasty<\/h3>\n

Corn, or maize, is one of the world\u2019s oldest crops. Its domestication can be traced back to Mesoamerican civilisations in what is today southern Mexico. It is the second most produced crop in the world (behind sugar cane) and the largest crop produced in China, surpassing 300 million tonnes a year.<\/p>\n<\/div>\n
