It features golden rice, shredded chicken with a tangy, herbal twist, and sweet heat from a sticky red chilli jam. Here, rice serves as the warm foundation of a salad.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">The classic Hoi An method is similar to that in Singapore, Malaysia and Thailand: free-range chicken is gently poached in a broth with ginger and shallots, then removed and shredded. The poaching liquid cooks the rice, which is first toasted in chicken fat.
