A vegetarian <strong data-qa=\"ContentSchemaRender-defaultRenderMapFunctions-Component\" class=\"css-1mniedq ex3nmsa17\">\u201cChar Siu\u201d Bao <\/strong>turns towards dim sum, using celeriac and black termite mushrooms with a fermented red bean curd glaze.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Such reinterpretations can keep culinary memories in circulation. A dish does not have to be reproduced faithfully for its origins to be recognised. Fried food and sparkling wine have long made comfortable companions, with acidity and bubbles offering relief from richness.
