Ye has spent more than two decades in the kitchen and has long specialised in ingredient posturing and hot pot. His career began in Beijing, before he went on to oversee large-scale dining projects and the operations of numerous hot pot restaurants. He joined MGM as chef de cuisine in 2024.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Travel and fishing have also fed his fascination with where ingredients come from and how they behave once they reach the kitchen. For his presentations, Ye does not start with sketches. Uniformly cut pieces of fish become what he describes as \u201cblocks of colour\u201d, arranged directly in vessels and decorative structures until the composition comes together.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">There\u2019s little room for improvisation once work begins. A presentation can require three chefs working in a 20-minute relay. The first breaks down the ingredients and handles the knife work, the second prepares the shaved-ice base and the third takes care of plating and decoration. With lobster, freshness can be apparent in a particularly visceral way: the claws may still be moving when it is brought out.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\"><strong data-qa=\"ContentSchemaRender-defaultRenderMapFunctions-Component\" class=\"css-1mniedq ex3nmsa17\">Precision on the plate<\/strong><\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Much of the visual effect begins with the knife. Thickness is controlled down to the millimetre because even a small difference can alter the texture and chew of an ingredient once it hits the broth. Cuts must also remain uniform enough to work within the composition.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">New Zealand blackfoot abalone requires especially precise knife work. Ye favours a horizontal cut for its visual effect, demanding close control over both thickness and timing. At Enchant\u00e9, postured hot pot brings together three elements, ingredients, aesthetics and knife skills.<\/p>\n<div datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1xdhyk6 ec74h0k0\">The same attention to detail can be seen in the Hanwoo supreme beef sirloin. Top-graded 1++A Hanwoo is sliced to display its marbling, then arranged with references to traditional Chinese painting before being cooked in the broth. Choices include fish maw and chicken, lobster bisque and matsutake chicken. The fish maw and chicken broth takes eight hours, combining fish maw with Guangdong-style old hen, while Ye&#8217;s seafood dipping sauce also uses old-hen stock as its base.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">That return to the fundamentals of hot pot is important. However elaborate the presentation, the arrangement is temporary. The ice melts. Carefully positioned slices are picked up. Ingredients disappear into broth. A composition designed over 20 minutes can be dismantled by diners in seconds.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">And that is rather the point.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\"><strong data-qa=\"ContentSchemaRender-defaultRenderMapFunctions-Component\" class=\"css-1mniedq ex3nmsa17\">The room becomes part of dinner<\/strong><\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">The theatricality does not stop at the table.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Enchant\u00e9 has five private dining rooms, decorated around green, blue, red and gold. Their names draw on Chinese wordplay, precious materials, creatures and auspicious meanings. Emerald refers to jade-green tones and peacock feathers, while Sapphire evokes the sea, sky and butterflies. Ruby draws on the phoenix, while the gold rooms turn to cranes, prosperity and imperial imagery.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">The interiors take their cue from traditional Chinese textile art, with layers and arches intended to recall an unfurling scroll. Natural gemstones, flora and fauna appear throughout the five rooms, while carpets, textiles and embroidery have been made by Chinese artisans.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Look more closely at the creatures on the walls and another level of craftsmanship appears.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">The peacocks, phoenixes and cranes are rendered using Suzhou embroidery, a Chinese intangible cultural heritage craft with a history stretching back centuries. Silk can be divided into strands as fine as 1\/64 or 1\/128 of a thread. Dozens of shades are then blended to reproduce gradations of light and colour; individual feathers may contain several tones to give them depth.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">There is an appealing correspondence between wall and table. On one, minute strands of silk turn a crane&#8217;s feathers into something almost painterly. It was part of MGM&#8217;s two-year Maritime Silk Road Art Feast programme, which invited eight chefs from seven cities associated with the maritime and overland Silk Roads to collaborate with MGM chefs.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Dunhuang makes an intriguing source of inspiration. At the end of the Hexi Corridor, it was an important meeting place on the ancient Silk Road, and its Mogao Caves preserve centuries of artistic exchange between cultures. For the Macau dinner, Dunhuang aesthetics were brought together with sculptural food presentation.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">However elaborate the deer, cranes and towers of ice may be, they are ultimately made to be eaten. Chopsticks reach across the table, seafood and carefully arranged beef disappear into the broth, and the composition gradually comes apart. That fleeting quality is part of the pleasure at Enchant\u00e9. A crane embroidered in silk may endure for years; Chef Ye\u2019s work has a much shorter life.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Dinner is meant to be savoured.
