A few familiar dishes have come to represent thousands of regional techniques, ingredients, migrations and memories.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">The reboot of <em data-qa=\"ContentSchemaRender-defaultRenderMapFunctions-Component\" class=\"css-1mniedq ex3nmsa15\">MasterChef Asia,<\/em> after a decade off the air, seeks to change that by placing the region\u2019s home cooks, flavours and ambition on screen.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Having Asian cuisine represented and judged by chefs with deep, personal connections to the region is important. Chefs Edward Lee, Pichaya \u201cPam\u201d Soontornyanakij and Kelvin Cheung will not simply decide whose dish is best.
