He spoke to Andrew Sun.<\/em><\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">I grew up in a very small German countryside village of 800 people. We gardened, picked fruit and made jam. We ate big portions of potatoes, pork, cold cuts and rice pudding with apple compote. That was my treat as a kid.<\/p>\n<div datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1xdhyk6 ec74h0k0\">Now, after 31 years in Hong Kong, I enjoy local food with spices and <span data-qa=\"Component-Text\" class=\"css-0 ef9u0v00\">ginger<\/span>. My comfort food these days is beef brisket noodles.<\/div>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">As a European, I like beef to be softer, with a rich and clean stock, and not so herbal. My preference is <strong data-qa=\"ContentSchemaRender-defaultRenderMapFunctions-Component\" class=\"css-1mniedq ex3nmsa17\">Chung\u2019s Dai Pai Dong<\/strong> (57 Shau Kei Wan Main Street East, Shau Kei Wan. Tel: 3753 4499) is good for <span data-qa=\"Component-Text\" class=\"css-0 ef9u0v00\">fish ball<\/span> and fish cake noodles. I like the newer, more spacious Fortress Hill shop. The home-made chilli sauce is a must-try.
