Beyond that, she offers cooking masterclasses and occasionally hosts tours, guiding hungry visitors to her favourite eateries in her hometown.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">We joined one such tour, and the first stop was at one of Le\u2019s favourite <em data-qa=\"ContentSchemaRender-defaultRenderMapFunctions-Component\" class=\"css-1mniedq ex3nmsa15\">mi quang<\/em> spots, Mi Quang Nhung (135 Nguyen Tat Thanh, Hai Chau), an unassuming street stand in the city\u2019s Hai Chau neighbourhood.<\/p>\n<div datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1xdhyk6 ec74h0k0\">Unlike <span data-qa=\"Component-Text\" class=\"css-0 ef9u0v00\">pho<\/span>, the noodles in <em data-qa=\"ContentSchemaRender-defaultRenderMapFunctions-Component\" class=\"css-1mniedq ex3nmsa15\">mi quang<\/em> are not bathed in soup; instead, the dish\u2019s thicker broth \u2013 which is almost always coloured and flavoured with <span data-qa=\"Component-Text\" class=\"css-0 ef9u0v00\">turmeric<\/span> \u2013 coats rice noodles like a Southeast Asian ragu, with plenty of peanuts, spring onion, <span data-qa=\"Component-Text\" class=\"css-0 ef9u0v00\">coriander<\/span>, herbs and greens to enhance texture and freshness.<\/div>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">A Da Nang staple, <em data-qa=\"ContentSchemaRender-defaultRenderMapFunctions-Component\" class=\"css-1mniedq ex3nmsa15\">mi quang<\/em> can be eaten at any time of the day, but Mi Quang Nhung is only open in the morning. Naturally, <em data-qa=\"ContentSchemaRender-defaultRenderMapFunctions-Component\" class=\"css-1mniedq ex3nmsa15\">mi quang<\/em> is the only dish it serves. The noodles are hand-cut into thick strands, and customers can choose from a selection of toppings \u2013 stewed chicken, beef, pork rib, fish, or frog legs.
