The location was brutal.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">\u201cEvery person that stopped by or passed would say, \u2018You\u2019re dead. You chose the wrong location,\u2019\u201d Gan recalls. \u201cThere were about eight burger restaurants within five minutes\u2019 distance all around us, and they had much better traffic because some of them were global brands.\u201d<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">With no other staff and a business he feared would fail, he threw himself into the kitchen in an attempt to create a signature burger sauce that might keep him alive.<\/p>\n<div datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1xdhyk6 ec74h0k0\">His restaurant at the time was built around an ancient Roman theme, so Gan looked back more than 2,000 years and unearthed the greatest elixir of the ancient table: garum, a fermented fish sauce full of <span data-qa=\"Component-Text\" class=\"css-0 ef9u0v00\">umami<\/span>.<\/div>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">After reinventing it to suit modern palates, what emerged was a savoury, complex marinade he eventually named Exotica Umami \u2013 Ex M for short.<\/p>\n<div class=\"image-inline-container e1a5rv550 css-1llrc1m e1yqhwb40\" data-qa=\"Component-renderMap-StyledDiv\">\n<div class=\"image-inline caption e1fvabeq0 css-19sk4h4 ea9pn0s0\" data-qa=\"Component-Container\">\n<figure class=\"image-inline caption ea9pn0s1 css-12vv9w2 e1gf69pb0\" data-qa=\"ArticleImage-ArticleImageContainer\">\n<div data-qa=\"ArticleImage-handleRenderImage-ImageContainer\" class=\"css-bjn8wh e1gf69pb3\"><img decoding=\"async\" alt=\"Dan Gan at Sagano, the Kyoto-style Japanese restaurant at the New World Millennium Hong Kong Hotel with which he is currently collaborating.
