He was sourcing sturgeon roe \u2013 unfertilised fish eggs that are salt-cured to make caviar \u2013 from China, which is not known for producing luxury ingredients that end up on the white tablecloths of fine-dining establishments in the West.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Almost 10 years on, N25 Caviar is served in top restaurants across more than 20 countries, including Baan Tepa in Bangkok, Blackswan in Beijing, Cloudstreet in Singapore, Saint Peter in Sydney, and Da Terra, Ikoyi and The Ledbury in London.<\/p>\n<div datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1xdhyk6 ec74h0k0\">Last year, N25 Caviar ambassadors <span data-qa=\"Component-Text\" class=\"css-0 ef9u0v00\">Bjorn Frantzen<\/span>, of three-Michelin-star Zen in Singapore, and Jan Hartwig, of three-Michelin-star Restaurant Jan in Munich, Germany, even put their names on a bespoke release of N25 Caviar processed to their specifications.<\/div>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Gehnen\u2019s journey with N25 Caviar has not always been plain sailing.<\/p>\n<div datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1xdhyk6 ec74h0k0\">\u201cA decade ago, it wasn\u2019t too common to be flying the flag for <span data-qa=\"Component-Text\" class=\"css-0 ef9u0v00\">Chinese caviar<\/span>. I was always explaining why China made the best caviar, how the terroir, the environment, is so good,\u201d the now 29-year-old explains.<\/div>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">\u201cBut, of course, not everyone wanted to hear that or would accept that.
