Locals could pop by its kiosks at Ion Orchard or Century Square to pick up a bundle of Nonya rice dumplings.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Today, only two branches of the brand remain standing, at Joo Chiat Place and East Coast Road. Earlier plans to sell or list the business have also been shelved.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">But if you ask Edmond Wong, third-generation owner of the family business, this scaling back is not a sign of failure, but a testament to the family\u2019s efforts to \u201csafeguard what is really important\u201d.\u00a0<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Despite the downsizing, Kim Choo\u2019s revenues continue to climb every year. But Wong, who is also director of business development and corporate social responsibility, is not concerned about \u201cvanity\u201d metrics. Instead, he aims to \u201csustain a good business\u201d, which he believes means protecting heritage and sustaining a community.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">And the reconfiguration does not mean that Kim Choo is abandoning expansion. Said Wong: \u201cOur growth strategy right now is not growth for growth\u2019s sake, but we grow with a good purpose.\u201d<\/p>\n<h2 class=\"-tracking-5% mb-4 md:mb-6\" data-testid=\"heading-component\">Living history<\/h2>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Wong\u2019s grandmother, the eponymous Lee Kim Choo, founded the food establishment under a banyan tree in the aftermath of World War II, before securing a bank loan and setting up in a shophouse.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">His parents eventually inherited it, introducing new products \u2013 such as chicken, vegetarian and bite-sized renditions of its rice dumplings \u2013 and expanding the business.<\/p>\n<div class=\"whitespace-normal mb-4 md:mb-6\" data-testid=\"article-inline-image-component\">\n<figure class=\"table w-full\"> <img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cassette.sphdigital.com.sg\/image\/businesstimes\/a680cf98a242c9e68459957c930122e1f798fffe5922996afb543f9ec917345b\" alt=\"\" height=\"760\" width=\"1140\" class=\"block max-w-full w-full\"\/><figcaption class=\"m-0 mt-1 p-0 text-3xs text-gray-525 table-caption caption-bottom\">Kim Choo makes a limited quantity of Nonya kuehs every day. <span>PHOTO: TAY CHU YI, BT<\/span><\/figcaption><\/figure>\n<\/p><\/div>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Wong, formerly a programmer, joined Kim Choo in 2009, because the company was facing a manpower crunch. The government had implemented significant manpower restrictions to manage Singapore\u2019s dependence on foreign labour.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">His brothers, previously an accountant and a teacher, similarly returned to bolster the family business. So I think that\u2019s why we were willing to come back.\u201d<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Over the years, they have made several changes to try to keep the business alive.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">And indeed, some have not survived. Kim Choo attempted to start a business for halal rice dumplings with a halal kitchen, which suffered from manpower shortages. It also started restaurants and mall kiosks, which later closed due to mounting worries over strained resources and operational costs, such as manpower and rent.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">But other moves have been more enduring.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Recalling a story from his childhood where two brothers \u2013 one who could not see, and one who could not walk \u2013 worked together to escape a fire, Wong was inspired to hire persons with disabilities to work for the business.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Remembering that his grandmother \u201cadopted people off the streets to work for her\u201d, he believed that she would also support his idea.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Kim Choo now hires about 15 persons with disabilities across its factories and outlets. Many do well in food preparation, carrying out repetitive, precise tasks such as trimming mushroom stems and weighing out portions of meat.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Instead of handling delivery in-house, Kim Choo now outsources the final step in sending its kuehs and rice dumplings to customers, to free up hands for food production.<\/p>\n<div class=\"whitespace-normal mb-4 md:mb-6\" data-testid=\"article-inline-image-component\">\n<figure class=\"table w-full\"> <img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cassette.sphdigital.com.sg\/image\/businesstimes\/c9c3a4bd951c9ee28b45f43d416fd696fdc20e7243638bd7fdd83e0970ac33e0\" alt=\"\" height=\"760\" width=\"1140\" class=\"block max-w-full w-full\"\/><figcaption class=\"m-0 mt-1 p-0 text-3xs text-gray-525 table-caption caption-bottom\">Kim Choo&#8217;s rice dumplings are hand-wrapped. <span>PHOTO: TAY CHU YI, BT<\/span><\/figcaption><\/figure>\n<\/p><\/div>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">The brothers also brought automation into the production process.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">To maintain the quality of its products, some steps must still be done manually, Wong said. For example, rice dumplings need to be wrapped by hand, as pandan leaves come in different shapes and sizes.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">But others can be shortened, he added.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">His grandmother and parents used to wash and soak glutinous rice by hand \u2013 a process that could take four to six hours, as rice in Singapore is imported and older crops need more time to absorb water before cooking.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">This long preparation time meant that the business could not easily adjust production volumes.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">After taking up government grants and exploring existing technologies in mainland China, Japan and Taiwan, Kim Choo developed proprietary technology for preparation processes.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">It can now \u201ccondition\u201d rice in under 10 minutes \u2013 and more consistently, too, said Wong, admitting that he would sometimes bite into uncooked rice in his grandmother\u2019s dumplings.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">The business produces about 2,000 rice dumplings a day, and 50 packs of each type of kueh \u2013 a controlled quantity, as no preservatives are used.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Wong also sees Kim Choo as a heritage brand, beyond being stand-alone F&amp;B stalls. Formerly a \u201cfestivities product\u201d consumed primarily during Chinese New Year and the Dragon Boat Festival, it is now a place that grandparents bring their grandchildren, and locals share with their foreign friends.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">It is an original equipment manufacturer for several partners, including hotels.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Kim Choo\u2019s East Coast location functions as one of the Singapore Tourism Board\u2019s Singapore Visitor Centres, and the company runs tours and offers workshops.<\/p>\n<div class=\"whitespace-normal mb-4 md:mb-6\" data-testid=\"article-inline-image-component\">\n<figure class=\"table w-full\"> <img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cassette.sphdigital.com.sg\/image\/businesstimes\/f2ee3451c5917850ed50610c76b8c276bfaa836046dc0ac5113bc6ff414a5150\" alt=\"\" height=\"765\" width=\"1140\" class=\"block max-w-full w-full\"\/><figcaption class=\"m-0 mt-1 p-0 text-3xs text-gray-525 table-caption caption-bottom\">Kim Choo\u2019s East Coast branch houses a Singapore Visitor Centre. <span>PHOTO: TAY CHU YI, BT<\/span><\/figcaption><\/figure>\n<\/p><\/div>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Rumah Kim Choo, a Peranakan apparel boutique run by Wong\u2019s brother, has stretched the business\u2019 reach into the fashion space, and has been showcased in fashion shows around the world.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">These incremental efforts to expand and diversify have paid off. In the early 2010s, revenue grew 15 per cent, then 20 per cent year on year, before stabilising at about 30 per cent.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">\u201cWe haven\u2019t seen a plateau until only very recently,\u201d Wong said. Revenue growth slowed to about 10 per cent in the latest financial year, which he attributed to the rise of imitation brands in the market.<\/p>\n<h2 class=\"-tracking-5% mb-4 md:mb-6\" data-testid=\"heading-component\">Strategic surrender<\/h2>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">In the process of scaling the business, the family behind it began to consider a public listing.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">It would be able to raise funds, and thus increase its factory space, hiring and capacity, Wong recalled thinking. In an imaginary ideal scenario, any unused space could also be leased out, he added.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Internationalisation was a part of this listing journey, and Kim Choo began to explore the idea of producing sauces \u2013 which face fewer restrictions than meat products \u2013 for export.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">A Chinese business expressed its interest to buy a 60 per cent stake in Kim Choo and list it overseas, which the family rejected after months of consideration. While the valuation was interesting, Wong was worried that it would \u201cchange the entire system\u201d of the business.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">He also began to feel the numbers take over. Wong worried about profit margins being squeezed, even as revenues increased.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">Bigger is not always better. Growing a top line with a purpose is \u201cjust for vanity\u201d, he said.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">\u201c(This focus on vision and growth intensified) until a point whereby I said: \u2018Why am I doing all these things? I don\u2019t even have time for my own family,\u2019\u201d Wong remembered.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">After taking his concerns to his family, they agreed that rather than racing to fulfil targets, they would set their listing ambitions aside.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">But Wong said the business is not stagnating. Instead, it is choosing how to grow purposefully.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">While the brand is rooted in traditional flavours, it is innovating products to engage younger audiences. Kim Choo recently launched a truffle rice dumpling, and a chocolate dumpling is in the works.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">With the announcement of the <a class=\"text-verticals-btblue underline hover:text-blue-500\" data-testid=\"article-annotation-link-component\" href=\"https:\/\/www.businesstimes.com.sg\/companies-markets\/johor-singapore-sez-master-plan-said-be-nearing-completion-data-centres-semiconductors-draw-interest\" target=\"_blank\" rel=\"noopener\">Johor-Singapore Special Economic Zone<\/a>, the business is also exploring the potential of setting up a production facility for sauces in Malaysia.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">This would overcome the issue of space constraints in Singapore and also ease the process of receiving halal status, Wong said.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">While food is now still the main driver of the company, making up 80 per cent of the business, he envisions Rumah Kim Choo growing to take a bigger share.\u00a0<\/p>\n<div class=\"whitespace-normal mb-4 md:mb-6\" data-testid=\"article-inline-image-component\">\n<figure class=\"table w-full\"> <img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cassette.sphdigital.com.sg\/image\/businesstimes\/1b4e0f31204e6b55d9d7bf2bc84cf3ea1a8ca431de071b49639035eedef0b717\" alt=\"\" height=\"760\" width=\"1140\" class=\"block max-w-full w-full\"\/><figcaption class=\"m-0 mt-1 p-0 text-3xs text-gray-525 table-caption caption-bottom\">The Kim Choo brand has expanded to focus on sharing Nonya culture with Singaporeans, including through apparels and utensils. <span>PHOTO: TAY CHU YI, BT<\/span><\/figcaption><\/figure>\n<\/p><\/div>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">\u201cPerhaps you could find boutiques elsewhere,\u201d he said, speculating that the brand could even be spun off to run independently.\u00a0<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">On Kim Choo\u2019s tourism arm, he noted a \u201cgrowth in demand for experiences\u201d.<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">\u201cI think expanding the top line is going to be very crucial for us, because without that we cannot do all these things,\u201d Wong said.\u00a0<\/p>\n<p class=\"whitespace-pre-wrap break-words mb-4 md:mb-6\" data-testid=\"article-paragraph-component\">But he summed it up: \u201cIf we expand without the slightest thought about how we first started our business, I think (we will) definitely&#8230; lose our soul, and Kim Choo will be different.\u201d<\/p>\n<div data-testid=\"article-btg-newsletter-component\" data-section-name=\"newsletter\" data-section-label=\"decoding asia 2\" class=\"track-impression border-t border-gray-175 py-3\">\n<div>\n<p class=\"font-lucida text-xl font-medium italic leading-normal -tracking-5% text-gray-850\">Decoding Asia newsletter: your guide to navigating Asia in a new global order. <span class=\"inline cursor-pointer border-none p-0 font-lucida text-inherit text-xl font-medium italic leading-normal !-tracking-5% text-verticals-btblue !underline outline-none hover:text-blue-500\">Sign up here to get Decoding Asia newsletter.<\/span> Delivered to your inbox.
