But the family behind the restaurant is fighting to bring back the street food, which is popular in mainland China, Hong Kong and Taiwan and prized for its distinct, potent stench.<\/p>\n<div datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1xdhyk6 ec74h0k0\">\u201cThe scene of <span data-qa=\"Component-Text\" class=\"css-0 ef9u0v00\">stinky tofu<\/span> in Taiwanese night markets is an invitation to community and tradition,\u201d owner David Liao says.<\/div>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">The dish is \u201ca cherished taste of home and a source of cultural pride,\u201d he says.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Several restaurants in the San Gabriel Valley offer the dish, with most deep-frying squares of the tofu, resulting in a crisp exterior and a porous, spongelike centre. The flavour and smell can range from mild to eye-wateringly stinky, like an extra-funky blue cheese or excellent kimchi.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">For three years, it was the signature dish at Golden Leaf, until a neighbour decided they did not like the smell.
