The Valrhona afternoon tea set sees The Ritz-Carlton\u2019s executive pastry chef Ngan Kin Pong team up with Valrhona APAC pastry chef Guillaume Lopvet on a four\u2011hands menu that stars single\u2011origin couvertures, or chocolates with a relatively higher percentage of cocoa butter.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Begin with savoury bites including Comt\u00e9 crackers with fennel, cocoa-kissed truffle tartlets and foie gras brioche dusted with cacao nibs. Next is a set of entremets built around matcha and yuzu, passion fruit and 53 per cent Hukambi, the aromatic 70 per cent Guanaja, and 80 per cent Confection Ghana with coffee hazelnut praline \u2013 plus warm chocolate scones and hazelnut brioche to round out the menu.
