Before the sourdough bakery opened Cu\u00edt \u00c9picerie in Central, <span data-qa=\"Component-Text\" class=\"css-0 ef9u0v00\">sisters Tiffany and Stephanie Tse<\/span> chose to begin in Sai Kung. Photo: Handout<\/figcaption><\/figure>\n<\/div>\n<\/div>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Opening in Sai Kung allowed them to grow deliberately. \u201cEverything about Cu\u00edt makes sense here \u2013 the slower rhythm, the produce-led way we cook, the feeling of the room, even the kinds of regulars who come back,\u201d Tiffany adds. In a district where word of mouth travels fast and regulars return every weekend, that trust becomes the foundation for expansion.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">The pattern stretches back decades. Local Sai Kung company Castelo Concepts, founded by the late Wayne Parfitt in 1992, began with Pepperoni\u2019s in Sai Kung and went on to open Jaspas \u2013 also in Sai Kung \u2013 St Barts and over 90 more venues across Hong Kong and Vietnam.
