Anybody with rudimentary knowledge of Chinese culture will recognise Hangzhou as a byword for refined gastronomy.<\/p>\n

The city, which has stood on the bucolic banks of the West Lake for over 2,000 years, is the southern terminus of China\u2019s Grand Canal and served as the country\u2019s capital during the Southern Song dynasty<\/span>.<\/div>\n
Centuries before the first public restaurants opened in France, Hangzhou<\/span> had taverns, nightclubs, speciality restaurants \u2013 vegetarian for Buddhists, spicy food for merchants from Sichuan<\/span> province and China\u2019s more western areas \u2013 delivery services, and all kinds of entertainment and services around its lake and canals.<\/div>\n

Today, to be familiar with modern China\u2019s fine-dining scene is to know the name Fu Yueliang. The Hangzhou native trained at Zhiweiguan, a century-old Hangzhou institution that once prepared banquets for foreign dignitaries, and is a third-generation disciple of chef Dong Shunxiang, a master of the cuisine of Zhejiang, the province in which Hangzhou is located.<\/p>\n

Fu rose to fame at 28 Hubin Road, at the Hyatt Regency Hangzhou, where he revolutionised his hometown\u2019s cuisine from 2004 to 2011. During this period, he popularised a pagoda-shaped rendition of dongpo rou<\/em> \u2013 a classic Hangzhou dish made by pan-frying and then red-cooking pork belly \u2013<\/strong> fashioned from a single strip of carefully carved braised pork belly.<\/p>\n

Fu opened Ru Yuan in 2023. The two-Michelin-star restaurant sits within the Hangzhou Botanical Garden \u2013 which operates both as a public park and research area dedicated to plant cultivation \u2013 near the northwest end of West Lake.<\/p>\n<\/div>\n
