For chef Huang Jinghui, the essence of the region\u2019s cuisine is rooted in the salt air of Huilai county, on the coast just south of Shantou.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">Growing up near Huilai\u2019s historic Shenquan Port, he would listen to his grandmother\u2019s stories of families who, unable to afford cooking oil, relied on <em data-qa=\"ContentSchemaRender-defaultRenderMapFunctions-Component\" class=\"css-1mniedq ex3nmsa15\">sa sek<\/em>: the method of boiling catch directly in seawater.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">This necessity gave birth to the classic Chaoshan dish <em data-qa=\"ContentSchemaRender-defaultRenderMapFunctions-Component\" class=\"css-1mniedq ex3nmsa15\">yu fan<\/em> (literally \u201cfish rice\u201d), which typically comprises whole fish served in shallow bamboo baskets, accompanied only by soybean paste.<\/p>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">\u201cDespite its name, <em data-qa=\"ContentSchemaRender-defaultRenderMapFunctions-Component\" class=\"css-1mniedq ex3nmsa15\">yu fan<\/em> contains no rice,\u201d Huang says. \u201cThis speciality embodies the wisdom of fishermen. With no refrigeration at sea, they would cook their catch in seawater. His fans include Hong Kong celebrities <span data-qa=\"Component-Text\" class=\"css-0 ef9u0v00\">Karen Mok Man-wai<\/span>, <span data-qa=\"Component-Text\" class=\"css-0 ef9u0v00\">Carina Lau Ka-ling<\/span> and <span data-qa=\"Component-Text\" class=\"css-0 ef9u0v00\">Tony Leung Chiu-wai<\/span>, and some prominent Hong Kong tycoons.<\/div>\n<p datatype=\"p\" data-qa=\"Component-Component\" class=\"e8zc9q40 css-1c6uqr6 ec74h0k1\">But the road to success was not easy. Huang lost his father early in life, which prompted him to leave school \u2013 even though he was a good student \u2013 and build his future in Guangdong\u2019s capital, Guangzhou.
