In fact, Granddad hadn\u2019t wanted him to become a chef, Damian shared. \u201cHe said, \u2018Men should not be in the kitchen.\u2019 I turned to him and said, \u2018But you are, Pop.\u2019 He said, \u2018I\u2019m different\u2019. I said, \u2018I think, so am I!\u2019\u201d<\/p>\n

He continued: \u201cI realised how important it was for me to preserve the dishes he made. Initially, I didn\u2019t want to do it.\u201d But, he then realised: \u201c\u2018If this man dies, everything is lost.\u2019 I felt it was so important to preserve the food, the dishes, the heritage that I grew up with, and share it with everybody.\u201d<\/p>\n

If Gilmore D\u2019Silva were to visit the restaurant, \u201cHe would eat. And, let’s say I would walk out of the kitchen. I think he would have been surprised. He would probably say, \u2018Not bad, Damian. You did well.\u2019\u00a0<\/p>\n

“He wouldn\u2019t say it out loud, but I know he would have been proud.\u201d<\/p>\n
